Tina Cannon has over 35 years in the culinary industry. She is a classically trained chef that has worked on many capacities from banquet, Sous, executive chef and Grand Champion in BBQ.

She has competed in BBQ competitions across the Southeast since 2009, winning more than $100K and over 200 category wins. She has appeared in cooking competition shows on Travel Channel, Apple TV, Amazon Prime, Destination America , Netflix and Food Network; as well as some local Networks. Tina is active in social media as well as her own Web Page and YouTube channel, inspiring cooks across the world. She has followers from Alabama to Zimbabwe.

Tina volunteers at the local culinary school teaching and inspiring students in various culinary classes.

In 2021 Tina cooked over 43,000 meals alone, single handedly for Meals on Wheels of Coweta and is on target for 50,000 for 2022.

Her Motto is “you have to give back to your community, and there is no better way for me, than to feed people in need.”

Bacon Wrapped Pork Tenderloin with Redeye Gravy

Ingredients: 

2  Pork Tenderloins
12 oz Hickory or Applewood  thin sliced  bacon
Big Green Egg Ancho & Coffee Seasoning
Kosher Salt
1 TBL AP Flour,
1 TBL brown sugar
2 oz of cream
1 cup of strong coffee.   
Chopped Scallions .

Coat your tenderloin lightly with Kosher salt and a heavy coat of Big Green Egg Ancho & Coffee Seasoning Tuck small end of pork tenderloin under and wrap with bacon, tuck bacon under on the end. Grill, at  350 degrees for about 15 minutes or until 135°, let rest 10 to 15 min while you make sauce.

Brown 4 slices of chopped bacon till crisp, add heaping TBL of flour to the pan and cook for about 1 or 2 minutes add 1 tsp of your coffee rub  1 TBL brown sugar and 1 cup strong coffee, stir well, turn down heat and stir in  about 2 oz of cream; cook about 1 minute, sauce will thicken.  Serve your Pork tenderloin sliced on top of stone ground grits, noodles or rice and drizzle with gravy , Garnish with a sprinkle of your favorite coffee rub and scallions.
