Uncle Lou learned to grill over charcoal at a very young age from his Portuguese parents.

Grilled fish, like sardines and mackerel, and spicy grilled chicken were his first loves.

 

Uncle Lou got his first smoker, a Large Green Egg in 2007.  Since then, his love for smoking and grilling, his collection of smokers has grown.

Uncle Lou can now be found playing around on one of his 10 + smokers, whipping up a batch of beef jerky or smoked nuts, smoking a fresh batch of Maple cured bacon.

 

Uncle Lou lives in Antigonish, Nova Scotia with his beautiful wife Linda and his fur-baby Ernie Elizabeth.
