Rustic Summer Garden Chimichurri

WHAT YOU'LL NEED
︎1 C flat leaf parsley, finely chopped (1 bunch)
︎½ C cilantro, finely chopped
︎½ C fresh mint leaves, chopped
︎2 Tbsp red wine vinegar
︎2 Tbsp lemon zest
︎3 cloves garlic, minced
︎1 tsp oregano
︎2 shallots, finely chopped
︎1 serrano chili, seeds removed and finely chopped
︎S+P to taste
︎¼ cup avocado oil (or more)
WHAT YOU'LL DO
Add all ingredients to a medium size mixing bowl. Stir to combine. Slowly drizzle in oil. Season to taste. Let sit for at least 30 minutes before adding more oil, if desired.
