"How ya doing kid!" was always the greeting I would get from my grandfather, or Junior as he was nicknamed throughout his life, as he would swallow me up in a big hug. One passion we both shared is food. Junior taught me how to cook so many family staples, and his favorite thing was having people eat his delicious food. While Junior is no longer with us, I happily continue to shar our passion for food, and sharing my food creations with you!

Chipotle Peach Jalapeno Chicken Thighs
INGREDIENTS
Fresh Chicken Thighs
2-3 Peaches
Juice of 2 Limes
1 Jalapeno (minced)
1/2 tsp balsamic glaze
salt/pepper (to taste)
cilantro for garnish
Junior & The Kid Chipotle Peach BBQ Sauce
METHOD
1. Chop peaches and add to food processor/blender. Add lime juice and blitz until well combined.
2. Add chicken thighs to a bowl and cover with peach mixture and all ingredients except BBQ sauce. Mix together with hands to coat the chicken and let sit in the fridge for 1 hour
3. Smoke or grill (indirect) at 250F until internal temp reaches 165, brushing 2-3 times with Juniot & The Kid Chipotle Peach BBQ Sauce during the cooking process.
4. Garnish with cilantro and serve
