Hi all! My name is Eric and I moved to Texas in June 2020 to complete a pharmacy practice residency as a licensed pharmacist. After moving to Texas, I was able to obtain my first smoker and the rest is history! I love to spend free time outside in the yard smoking all different kinds of foods with my wife (also a pharmacist) and two dogs. I love to take traditional dishes and put my own BBQ style on them while trying to keep them “relatively” healthy. I hope you enjoy!
Blueberry-Lemon Pound Cake
Ingredients
Cake:
1/2 cup unsalted butter, softened
1 1/2 cups sugar
3 large eggs
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
1/8 teaspoon baking powder
1/2 cut sour cream
1 1/4 cups fresh blueberries, divided
Glaze:
1 cup confectioners' sugar
1 1/2 tablespoon whole milk
1/2 teaspoon lemon zest
1 tablespoon fresh lemon juice
Instructions:
Preheat oven to 350 F. Spray 1 ( 9-inch) cast-iron skillet or 3 (6-inch) cast-iron skillets with cooking spray.
For Cake: In a large bowl, beat butter and sugar with a mixer at medium speed until fluffy ( 3-4 mins), stopping to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Stir in lemon zest and vanilla.
In a medium bowl, whisk together flour, salt and baking powder. Gradually add flour mixture to butter mixture alternately with sour cream, beginning and ending with flour mixture. beating just until combined after each addition. Fold in 1 cup blueberries. Divide batter among prepared skillets. press remainng 1/4 cup blueberries into top of batter.
Bake until a wooden pick inserted in centers come out clean, 25-30 minutes. Let cool completely.
For Glaze: In a medium bowl, whisk together confectioners' sugar, milk and lemon zest and juice. Drizzle over cooled cakes.



BBQ Ribs
Prepare your ribs removing membrane and applying BBQRUBDOWN Good Ol Texas Step 1
Let Sit ~10 min while it creates its own binder. Then apply a heavy coat of BBQRubdown Sweet Heat and Sweet Honey.
Start BarrelBossQ and get to a temperature of 275
Place ribs meat side up on grill grate for 2.5 hours.
Prepare a foil wrap with honey, brown sugar, more BBQRubdown Sweet Heat, and 2oz of bourbon.
Wrap ribs in foil and place back on smoker meat side down for another 45 minutes.
Remove ribs and take juices, add to a bowl with honey and glaze ribs every 5 minutes for 15 minutes
Pull ribs out and place meat side up
