My name is Mike Lester aka 250NorthernBBQ on Instagram and Facebook.  I grew up in the Lower Mainland of British Columbia in a town called Chilliwack. From there I moved around a bit after school , finally landing here in Fort St John BC where me, wife and 2 kids have lived for 9 years. I work as the Field Crew Manager for a large Land Surveying company called GeoVerra. My job sees me on the road travelling this beautiful province on a regular basis visiting with staff , clients, sites etc. It truly is a great job.

 

In my spare time when I'm not BBQing , I can be found out camping with the family and friends or enjoying a good movie or video game for some down time. I have always enjoyed BBQ but truly got “into it” during the pandemic. Looking for something to occupy my time I went out and bought my first pellet smoker followed by my Kettle and from there the addiction has continued to grow. I look forward to the continuation of this bbq journey.

Smoked Queso

Feeds 6-8 people     Cooking Temp: 250 F     Time: 1.5 hours

Ingredients

1/2lb of ground Italian sausage

1lb of Velveeta Cheese

½ lb of a smoked cheese (I like Gouda) 

1 10oz of Ro*tel Fire Roasted diced tomato’s  

1 10oz can of cream of Chicken or Jalapeno soup

1 jalapeno seeded and diced (optional) 

2 cloves of minced garlic

2 tsp of Chili paste (optional) 

3Tbsp chopped cilantro 

2 Tbsp. of Slap Ya Mama I use the yellow! 

 

For Serving 

Nacho chips 

Crusty bread

Instructions

  1. Set your smoker to around 250f a let warm up 

  2. In a skillet add your sausage and begin to brown once slightly browned add the diced jalapeno and garlic and continue cooking until fully browned

  3. In a 3-5 quart Dutch oven added the Velveeta cubed, smoked cheese shredded, and all the canned ingredients including the liquid, then add the meat, top with the Slap-Ya Mama ( taste at about halfway through the cook if not spicy enough for you add more )

  4. Add to the smoker for around 1.5hrs or until well combined and hot stirring occasionally 

  5. Before serving give it a good stir and then add the cilantro onto. Serve with nacho chips, crust bread etc.
